To do the dough

125g unsalted butter
30g egg
150g plain flour
1/4 tsp vanilla essence
60g caster sugar
30g almond ground

Mix the vanilla, butter and sugar (low speed)
Fold in the egg and mix well
Pour in the flour and almond ground and mix it to a dough
Put in the fridge for 40mins before using

To do the filling

Canned fruit peach and pear halves
60ml UHT milk
60g dairy whipping cream
30g caster sugar
1 egg
1/2 pc vanilla stick

Mix the egg and sugar to creamy
Boil the milk, cream and vanilla stick together
Pour in the egg and mix well

To do the topping

1tsp vanilla essence
2 egg white
80g caster sugar
30ml water

Boil the sugar and water to thicken
Whip the egg white and add in boiled sugar into it
Whip until it is lukewarm
Mix the egg white and vanilla essence


Finishing

Roll the hardened dough into 1/2cm thick and put into pie mould
Arrange the pear and peach into the mould
Pour the filling and bake at 180C for 30mins.
Spread the topping w icing sugar and brown it on the oven grill.

(Note: Not too much of the icing if doesn't want it too sweet)
