To do the sponge cake

250g sponge cake mix
5 eggs
50g water
50g unsalted butter

Mix all the ingredients except butter. Using low speed to whip, then add melted butter and mix well. Bake at 180C for 20mins

To do the strawberry filling

150g strawberry puree
200g Millac Cream
1tbsp 'Red Man'Grand Marnier
1tbsp gelatine powder
3tbsp hot water
1 egg white
50g caster sugar
2tbsp water

Whip the cream to soft peak
Add in strawberry puree and grand marnier and mix well
Dissolve the gelatine with hot water and add into the above mixture and mix well. Boil water and sugar to thicken and add the egg white and mix well.

To do the finishing

Cut the sponge cake into 2 layers and place the first layer into the cake ring. Pour 1/2 the filling and put some strawberries around then add in 2nd layer of cake. Pour the remaining filling on top and cover the whole cake.
Keep in the fridge for 1hr to set the shape.
